How Champagne is made
Champagne is not just sparkling wine — it is a method. Every bottle is fermented twice, aged on its lees, riddled by hand or machine, and finally disgorged with a precise dose of sugar. The result is a wine of pressure, patience and place.
From vineyard to flute
The vineyard and harvest
Champagne is made from Chardonnay, Pinot Noir and Pinot Meunier grown on chalky soils. Grapes are picked by hand, because whole bunches must arrive intact at the press. Machine harvesting is forbidden.
The region's northerly climate gives high acidity and modest ripeness — exactly what sparkling wine needs. Vintage declarations are rare; most years the harvest is blended across sites.
Gentle pressing
Whole clusters are loaded into a shallow press and squeezed very slowly. Only the first 2,050 litres of juice from every 4,000kg of grapes can be used for Champagne; this is called the cuvée and gives the purest, finest wine.
The taille, or second press, is richer in phenolics and often sold off or used in less refined wines. Pressing too hard extracts bitterness from skins and seeds.
First fermentation
The clear juice is fermented like a still white wine, usually in stainless steel to preserve freshness. Some houses ferment or age portions in oak barrels for texture and complexity.
Malolactic fermentation is common in Champagne, softening the wine's naturally sharp acidity and adding a creamy, biscuity note.
Blending — the assemblage
This is where the house style is defined. The chef de cave blends dozens of still base wines from different villages, varieties and vintages to create a consistent non-vintage cuvée.
Vintage Champagne comes from a single declared year. Prestige cuvées such as Dom Pérignon, Cristal and Krug are the house's flagship blends, often from grand cru sites.
Tirage and second fermentation
The blended wine is bottled with a small amount of yeast and sugar — the liqueur de tirage — then sealed with a crown cap. A second fermentation inside the bottle produces the bubbles.
Carbon dioxide dissolves under pressure, creating around six atmospheres of pressure. This is why Champagne bottles are made of thick glass and wired shut.
Ageing on the lees
Bottles are stored horizontally in cool cellars while dead yeast cells — the lees — break down. Minimum ageing is fifteen months for non-vintage and three years for vintage, but many houses age far longer.
Autolysis, the slow decomposition of yeast, gives Champagne its signature aromas of brioche, toast, nuts and biscuit. Longer ageing deepens these savoury notes.
Riddling — remuage
Over weeks or months, bottles are gradually tilted and turned so the sediment slides into the neck. Traditional riddling is done by hand; today many producers use automated gyropalettes.
The goal is to collect every speck of yeast in the cap, leaving the rest of the wine crystal clear.
Disgorgement — dégorgement
The neck of the bottle is frozen to trap the sediment in an ice plug. The cap is removed and the pressure shoots the plug out, leaving the wine clean.
A small amount of wine is lost in the process. Some producers top up with the same wine; others use a carefully measured dosage.
Dosage
A measured dose of sugar — the liqueur de dosage — is added before the final cork. The amount determines the style, from Extra Brut and Brut Nature to Demi-Sec and Doux.
Brut is the most common style. Extra Brut and Brut Nature are increasingly popular among growers who want to let the terroir speak without sweetness.
Corking and final ageing
The bottle is sealed with a mushroom cork and wire cage, then rested again so the wine integrates. Some Champagnes are released young and bright; others spend years in the house's cellars before release.
Great Champagne evolves for decades in bottle. The best vintages develop honey, dried fruit, truffle and spice while keeping their fine, persistent mousse.
Why only Champagne?
The name Champagne is protected by French law and international agreement. Only wines made by this method in the delimited region of northeast France may carry the name. Elsewhere, the same technique is called traditional method or méthode traditionnelle. The cool climate, chalk subsoil and strict ageing rules are what give true Champagne its unmistakable finesse.
Styles to know
Blanc de Blancs is made entirely from Chardonnay, usually leaner and more mineral. Blanc de Noirs comes from black grapes, Pinot Noir and Pinot Meunier, and tends to be richer and more structured. Rosé Champagne is made by adding still red wine or by brief skin contact. Vintage Champagnes express a single year; non-vintage cuvées aim for the house signature across years.
